The origin of barrel proof whiskies comes from the fact that whiskey is not allowed by the federal government to exceed 125 proof when it is put into its barrel. Most whiskey in the United States is therefore barreled between 115 and 125 proof. While it ages in the barrel the proof can go up or down depending on environmental conditions. Usually when a barrel it is emptied water is added to proof it down to bottling strength which for most of our whiskies is 92 proof. This barrel proof whiskey has not gone through that process and hasn't been "watered down." This is straight from the barrel! We distilled this batch of whiskey during the spring of 2018 and aged it in one brand new charred American white oak 30-gallon barrel. Because this barrel has more wood and air contact than the commonly used 53-gallon barrels, this whiskey aged around twice as fast. Crescent Creek Barrel Proof Straight Bourbon at 4 years old is the equivalent of most other 6+ year old whiskies.
Bottled-in-bond whiskey dates back to 1897 when the federal government defined "bottled-in-bond" as the gold standard of quality. The federal government mandated that all bottled-in-bond spirits must be sold at 50% ABV. That's 100 proof! We distilled this batch of whiskey during the summer of 2018 and aged it in one brand-new charred American white oak 30-gallon barrel. Because this barrel has more wood and air contact than the commonly used 53-gallon barrels, this whiskey aged around twice as fast. Brillari is an Italian style herbal liqueur that is commonly drunk after a meal. Brillari has a bitter-sweet flavor, produced by vapor distillation of herbs, roots, flowers, bark, and citrus. Recipe: Pour one ounce of Brillari into a wine glass. Add four ounces of sparkling wine. Garnish with an orange slice.
